Ne Quittez Pas, a fashionable French restaurant in Tokyo, has rolled out a controversial new menu that centers around an unlikely ingredient—dirt.
According to Japanese news website Rocket News 24, the dishes—including a potato dirt soup and dirt ice-cream—are delicious, without a hint of the earthy soil that went into them.
Consisting of coffee grinds and palm fibre, the dirt ingredient is actually a “novel and eco-friendly compost”—the chef states that it is this special dirt that makes his unconventional menu possible.
