How much would you pay for toast at a café? Apparently, in San Francisco, the market rate for “artisanal toast” is US$3 to US$4 a slice.
John Gravois of Pacific Standard recently wrote an article about toast being the latest artisanal food craze in the city—he started the piece off with a humorous and sarcastic description of a toast-making employee as having “the solemn intensity of a Ping-Pong player who keeps his game very close to the table: knees slightly bent, wrist flicking the butter knife back and forth, eyes suggesting a kind of flow state”.
However, the story soon goes beyond a straightforward mockery of yet another ridiculous hipster trend—the writer traced the roots of artisanal toast to a tiny hole-in-wall coffee shop named Trouble, whose owner has an intriguing tale to tell.
