Some restaurants produce up to 8 gallons of waste each hour, but for owner and head chef Justin Vrany, his Chicago-based restaurant ‘Sandwich Me’ has gone two years without producing waste.
In a short video by NationSwell, Vrany reveals how he turned his restaurant into an eco-friendly, sustainable establishment.
The restaurant operates on renewable energy and only uses local meat and produce. Vrany also recycles whatever trash the restaurant produces and even has a compost pile for discarded food.
